A Placer County ( Northern California) farmer inspects the condition of his drying persimmons which are in the process of the ancient Japanese art of "Hoshigaki"; a process by which the persimmons are peeled, placed on drying racks, and hand massaged daily until their natural sugars reside on the exterior of the dried fruit.
